Menemen is a simple Turkish egg dish with tomato, green pepper and onion. Serve it hot with good bread.

Ingredients

  • 3 eggs
  • 2 large tomatoes, grated or finely chopped
  • 1 green pepper, finely chopped
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp tomato paste
  • 1/2 tsp chili flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for serving

Instructions

  1. Heat the olive oil and butter in a pan over medium heat.
  2. Cook the onion and green pepper for 4–5 minutes until soft.
  3. Stir in the tomato paste, tomatoes, salt, pepper and chili flakes.
  4. Let the sauce simmer for 6–8 minutes until slightly thickened.
  5. Lightly beat the eggs and pour them into the pan.
  6. Stir gently until the eggs are just set.
  7. Sprinkle with parsley and serve right away.

Tips

  • Do not overcook the eggs. Menemen should stay soft and juicy.
  • Use ripe tomatoes for the best flavour.
  • Skip the onion if you prefer a simpler classic version.
  • Serve hot straight from the pan with fresh bread, olives and Turkish tea.
