Menemen is a simple Turkish egg dish with tomato, green pepper and onion. Serve it hot with good bread.
Ingredients
- 3 eggs
- 2 large tomatoes, grated or finely chopped
- 1 green pepper, finely chopped
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp tomato paste
- 1/2 tsp chili flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley for serving
Instructions
- Heat the olive oil and butter in a pan over medium heat.
- Cook the onion and green pepper for 4–5 minutes until soft.
- Stir in the tomato paste, tomatoes, salt, pepper and chili flakes.
- Let the sauce simmer for 6–8 minutes until slightly thickened.
- Lightly beat the eggs and pour them into the pan.
- Stir gently until the eggs are just set.
- Sprinkle with parsley and serve right away.
Tips
- Do not overcook the eggs. Menemen should stay soft and juicy.
- Use ripe tomatoes for the best flavour.
- Skip the onion if you prefer a simpler classic version.
- Serve hot straight from the pan with fresh bread, olives and Turkish tea.
